Ingredients
• 8 large eggs
• 1 cup chopped spinach
• 1/2 cup diced tomatoes
• 1/2 cup chopped bell peppers (any color)
• 1/4 cup diced red onion
• 1/2 cup crumbled feta cheese
• 1 tsp dried oregano
• Salt and pepper to taste
• Olive oil for greasing muffin tin
Steps
• Preheat your oven to 350°F. Grease a 12-cup muffin tin with olive oil.
• In a large mixing bowl, crack the eggs and beat them until well combined.
• Add the chopped spinach, diced tomatoes, chopped bell peppers, diced red onion, crumbled feta cheese, dried oregano, salt, and pepper to the beaten eggs. Mix everything together until evenly distributed.
• Pour the egg mixture evenly into the prepared muffin tin, filling each cup about 3/4 full.
• Bake in the preheated oven for 20-25 minutes, or until the egg bites are set and slightly golden on top.
• Once done, allow the egg bites to cool for a few minutes before carefully removing them from the tin.
Freezing and Reheating
• Let the egg bites cool completely on a wire rack.
• Once cooled, you can individually wrap each egg bite in plastic wrap or foil and store them in an airtight container or freezer bag.
• To reheat, simply remove the desired number of egg bites from the freezer and wrapping and microwave them on high for 1-2 minutes, or until heated through.
