Spinach and Artichoke Chicken Casserole

Ingredients:

•           1 Tbsp extra-virgin olive oil

•           1 lb boneless, skinless chicken breasts, cut into bite-size pieces

•           ¼ tsp salt

•           ¼ tsp ground pepper

•           2 cloves garlic, minced

•           1 (14 oz) can artichoke hearts, rinsed and chopped

•           4 cups fresh or frozen cauliflower florets, riced

•           3 cups coarsely chopped fresh spinach

•           4 oz reduced-fat cream cheese

•           1 cup shredded low-fat mozzarella cheese, divided

•           1 Tbsp chopped fresh dill

 

Steps:

•           Preheat oven to 375°F and coat a 9-by-13-inch baking dish with cooking spray.

•           Heat olive oil in a large pot over medium heat. Add chicken, sprinkle with salt and pepper, and cook until no longer pink, about 8 minutes. Add garlic and cook 1 more minute. Remove from heat.

•           Pat dry artichoke hearts. Add to pot with cauliflower rice, spinach, and cream cheese. Stir until melted and combined.

•           Transfer chicken mixture to baking dish. Sprinkle with half the mozzarella cheese.

•           Bake for 20 minutes until cheese is melted.

•           Let stand for 5 minutes before serving. Sprinkle with fresh dill.

Freezing and Reheating

•           Cool casserole completely after baking. Portion cooled casserole into serving containers or freezer bags. Label containers or bags with date and contents. Freeze for up to 3 months.

•           To Reheat: Preheat oven to 375°F. Place frozen casserole in oven-safe dish. Cover dish with foil and bake for 30-40 minutes until heated through. Remove foil for last 10 minutes to melt cheese.

•           Let stand before serving. Enjoy!
